What you need:
8oz package of rainbow quinoa
1/2 cup feta cheese
2.25 oz sliced black olives
1/2 cucumber- diced
3/4 cup of artichoke hearts
2 T lemon juice
Directions:
Cook quinoa on stove as directed by package. While it is cooking, mix all the other ingredients together in a large mixing bowl.
When quinoa is finished cooking. Let it cool for a few minutes and add it to the rest of the mixture.
Mix all ingredients together and refrigerate for 20-30 minutes or until completely cool. Serve alone or with another dish. I chose to serve this with chicken legs and it was the perfect amount of food for my family.
